A 45-day dry-aged ribeye seared over white-oak coals, basted in bone-marrow butter and rested beneath a veil of saffron smoke. Finished tableside with charred shallot and a whisper of sea salt.
Fire is honest. It strips a dish to its truth, and saffron gives it a soul.
